Observation (CORRECTED DURING INSPECTION): Various foods (listed below) observed in reach-in sandwich cooler in kitchen area above 4 C.
- Top cooler well items: whole eggs (18.7 C) and pork (18.7 C),
- Inside reach in unit: cooked rice (16.1 C) and homemade sweet and sour sauce (15.9 C)
Corrective Action(s): All foods in sandwich cooler were discarded during inspection. DO NOT use sandwich cooler until it is replaced/repaired and it can hold a temperature of 4 C or lower to prevent bacteria growth.

206 - Hot potentially hazardous food stored/displayed below 60 °C. [s. 14(2)]
Observation (CORRECTED DURING INSPECTION): Deep fried chicken held in buffet hot holding well observed at 43.4 C. Insert of deep fried chicken was over filled.
Corrective Action(s): Deep fried chicken was reheated to 74 C. As stated in previous inspection report, all lids on the buffet unit must be secure on top of insert to allow food in the unit to hold 60 C or above. Ensure all foods are held at 60 C and lids are secure on buffet unit to prevent the growth of bacteria and their toxins.

Observation: 1. Cup with no handle observed inside a container of Kwek Kwek mix.
2. Boxes of frozen foods observed stored directly on the floor in the walk-in freezer.
3. Frozen food in walk-in freezer observed not covered. Large amount of dripping condensation from fans causing ice build-up on shelving and on pans.
4. Light shield missing in preparation area by dishwasher.
5. Clean pots and pans stored directly on a rusty surface in preparation area.
Corrective Action(s): To prevent cross contamination of foods and food contact surfaces:
1. Ensure a scoop with a handle is used in dry good bins and they are stored in a sanitary manner outside the food bin.
2. All food and food contact surfaces are to be stored at least 6 inches off the floor.
3. All food, not in the process of cooling, are to be covered at all times.
4. Repair/replace light shield in preparation area to protect food and food contact surfaces from glass breakage.
5. Store all food and food contact surfaces on a surface that is nontoxic, smooth, and easy to clean.

Observation: 1. Bottom shelving in preparation area holding clean pots and pans observed with large amounts of rust.
2. Yellow cutting board being used in preparation area observed with deep gashes in its surface.
Corrective Action(s): 1. Repair/replace shelving unit to ensure all materials are durable, smooth, nontoxic, and easy to clean.
2. Large gashes in food contact surfaces can harbor bacteria and make the surface difficult to clean. Repair/replace cutting boards over time to prevent bacteria cross contamination.

Observation: 1. Sandwich reach-in cooler in kitchen area holding an ambient temperature of 15 C.
2. Walk-in freezer observed with large amounts dripping condensation creating large amounts of ice. Two inserts placed under fan to collect condensation.
Corrective Action(s): Repair/Replace sandwich reach-in cooler unit so it can hold potentially hazardous foods at 4 C or below. Do not use the unit until it has been repaired. Date to be completed: immediately.
2. Repair walk-in freezer to prevent cross contamination of food from condensation and ice.

Corrections Needed:
- Ensure temperature records of all cooling units are maintained to ensure all cooling units are at 4 C or below and -18 C or colder. Regular temperature checks will allow staff to observe any cooling units that are not at 4 C or below and take the necessary actions and contact management.

Observations During Inspection:
- Hand sinks stocked with hot/cold water, soap, and paper towel
- Freezers holding -18 C or colder
- High temperature dishwasher achieving 72.5 C
- No signs of pests
- Chemicals observed stored separately from food
- QUAT sanitizer in food preparation area at 200 ppm
- Raw food stored below all ready to eat foods in refrigeration units
- Proper defrosting techniques witnessed
