Observation (CORRECTED DURING INSPECTION): 1) Prep cooler inserts (sliced carrot, chopped vegetables, steamed dumplings) were stacked on top of each other and the top inserts measured at 12C. Operator reports they were placed in the prep cooler 1 hour ago. Operator relocated all inserts stacked on top an insert in to a working cooler.
2) Display cooler measured at 12C at the time of inspection. Operator reports all food items were placed in the display cooler 3.5 hours ago. Operator removed all food items in the display cooler and discarded them.
