BOH and FOH handwash stations stocked with liquid soap, paper towels, and hot/cold running water
=Walk-in cooler (4C), salad cooler (4C), sandwich cooler (3C) measured < 4 degrees C. Upright freezer measured -20 degrees C
=Soup hot holding (69C-74C) measured > 60 degrees C
=High temperature dishwasher had a final rinse temperature of 71.4C at the dish surface (minimum 71 C required for proper sanitizing)
=Sanitizer solution approximately 200 ppm QUATS from dispenser. As per violation noted above, spray bottles were refilled and measured 200 ppm QUATS.
=General sanitation was satisfactory at the time of inspection
=General food storage practices satisfactory at the time of inspection. Foods properly stored off the floor and covered.
=No evidence of pest activity noted at the time of inspection
=Ice machine and push slicer was maintained in a sanitary manner
