Observation: Plastic boards covering pizza dough in pans for proofing have grooves and edges that are moldy with black residue.
Corrective Action(s): Clean and sanitize with chlorine sanitizer, which is available on site.
Or replace with boards that are designed for food contact, that are more durable, easily cleanable and non-porous.
Operator said that new boards are on order.

Observation (CORRECTED DURING INSPECTION): Fruit flies were present on dish cloths hanging on the partition of the 2 compartment sink.
Made sanitizer with operator, 100ppm Chlorine and put cloths into sanitizer.
Operator has screens on front and back doors but these were open for walk ins.
Corrective Action(s): Cloths can be stored in sanitizer that is refreshed regularly during the day.
Please ensure that sanitizer is available for cleaning food contact surfaces especially after chopping meats and other items.
Keep screens closed at all times, especially during food prep.

Hand sink is supplied with running water, soap and paper towels in dispensers.
Walk in cooler <4C.
Coolers <4C.
Freezers <-18C.
Fly strips available, bought in bag but not put on - please place these in areas not above food prep areas or hand sink.
Dough press has black sheeting over top to prevent dust. Please ensure only food grade bags and plastics are used to cover. Operator said he will remove and sanitize, thank you.
Food prep areas are generally clean and well maintained.
