Equipment/utensils/food contact surfaces not maintained in sanitary condition [s. 17(1)]
Observation: 1. Food debris observed on surfaces of deli slicer located in upstairs prep area. Note: Upstairs prep area no longer in use today.
2. A small amount of mildew / biofilm buildup located within upstairs ice machine.
Correction: Deli slicer to be taken apart and washed, rinsed, and sanitized. For ice machine, ensure that ice is discarded and interior surfaces are properly washed, rinsed, and sanitized. Ensure all equipment and utensils are maintained in sanitary condition to protect food from potential contamination. Date to be corrected by: Today.

Adequate handwashing stations not available for employees [s. 21(4)]
Observation: 1. Upstairs and server station hand washing sinks lacked hot water at the time of inspection.
2. Bar hand washing station was obstructed with a shaker and similar dishes / utensils stored in the strainer basket. No paper towel available.
Correction: Above noted dishes / utensils removed from bar hand washing station and paper towels provided.
Ensure hot water is available at the above-noted hand washing stations. Date to be corrected by: August 13, 2019.
Ensure all hand washing sinks are unobstructed and adequately supplied at all times to facilitate proper hand washing.

Follow up to Rpt # MBEK-BEYUD5.

- Hot water available at hand sinks noted on previous routine inspection report. Paper towel in place for bar hand sink.
- Low temperature dishwasher (chlorine) in bar area measured at 57 degrees C and 50 to 100 ppm chlorine in the rinse residual at the utensil surface
- Deli slicer was observed being cleaned and sanitized after use at the time of inspection
- Ice machine (upstairs) observed to be in clean condition
- Ice machine scoops stored in metal food inserts. Note: A small metal food insert was provided at the bar ice well at the time of inspection for sanitary storage of this scoop.
- Sanitizer spray bottles properly labeled
- No opened canned foods observed at time of inspection
