Observation (CORRECTED DURING INSPECTION): OBSERVATIONS
1.) Food items were stored on the ground such as salt bag
and bag of potatoes.
2.) Raw meat was stored on top of cooked meat and
dairy products on the walk-in-cooler.
Corrective Action(s): CORRECTIVE ACTIONS
1.) Store food items above the ground at lest 6 inches
(15cm) at all times to aid in cleaning and pest monitoring.
2.) Store all raw meat products at the bottom of the shelf.

Observation: OBSERVATION
Mouse droppings were noted under the shelf where
the rice cooker was stored.

Clean and sanitizer the droppings and the area noted above.
Ensure to monitor for pest by visual inspection of the premises.

Bread cooling shelves, shelves in the dry storage area, the
in the 3- compartment sink had filth
accumulation. Scum or mold build-up was also observed
in the 3-compartment sink ; Grease build up was observed on vents.

Ensure to properly clean and maintain the areas noted
above in a good sanitary condition.

Observation (CORRECTED DURING INSPECTION): Foam/Mattress was found in the dry storage area. Operator
stated that this is owned by the previous owner.

Ensure to remove all personal items including the stove in back
storage area.

Comments

General Comments > General sanitation was satisfactory
> Handsink stations near the cookline, washroom and front
of house (for customers) was supplied with running hot and cold
water, liquid hand soap, and paper towels. No obstruction
observed.
> Sanitizer spray bottles measured 200ppm.
> 3-compartment sink was available but not in use at the
time of inspection. Manual ware washing was discussed with
the operator. 2 sink plugs were available.
> Coolers
- Beverages cooler in front of house measured 2C
- Walk-in-cooler, measured 4 C
- Prep cooler (Right side ) measured 4 C
> Freezers
- chest freezer at the back of house measured -20C
> Rice in the rice cooker measured 65 C.
-> cooling process was discussed with operator. Ensure to
cool it down within 2 hours from 60C to 20 C and
within 4 hours from 20 C to 4 C .
> FOODSAFE certified staff (owner) was on site at the time of the inspection ; Permit was posted.
* Create a temperature log sheet and ensure to record temperatures of coolers and freezers.
