Observation (CORRECTED DURING INSPECTION): Knives and dough cutter were stored in the space between the hand sink in the back and the prep sink.
Corrective Action(s): Discontinue this practice. The space in between countertops and equipment cannot be easiliy cleaned and sanitized and can contaminate the knives. Store all clean knives in designated knife holders.

Corrective Action(s): Do not store any items in hand sinks; hand sinks must be free of obstructions and used for hand washing only.

Observation: Scoops stored directly in dry ingredients in bins.
Corrective Action(s): Discontinue practice; scoop handles can contaminate dry ingredients. Wash and sanitize all scoops after each use, and store in a clean place. Use scoops only as needed.

- All hand sinks supplied with hot and cold running water, liquid soap, and paper towels
- Quat sanitizer available in two spray bottles at 200 ppm
- Pizza prep cooler was measured to be at 2C
- Walk-in cooler was measured to be at 3C
- Upright freezer temperature satisfactory
- Food stored in walk-in cooler was covered
- Equipment (dough mixer, meat slicer, etc.) was maintained in sanitary conditions
- No signs of pest activity noted at time of inspection
- General sanitation satisfactory; **Ensure floors are cleaned and sanitized daily. Minor cleaning required underneath equipment and shelving units.
