Observation (CORRECTED DURING INSPECTION): Chlorine bleach sanitizer is being used on wiping cloths and gelato making equipment - good. Scoops and containers are to be sanitized also throughout day.
Corrective Action(s): Follow 4 step method for scoops and containers using 1 tsp bleach in 1 litre water. Poster given during inspection.

Coolers are at 4 C or colder with the exception of equipment used for lower risk (non-potentially hazardous) foods only.
Internal temperature measured for gelato base and was < 4C. Pasteurized milk/dairy is used. No eggs used.
No hot holding today.
Hand washing sinks in kitchen and washroom have liquid soap and paper towels.
*** Food Safe level 1 certification - Operator is on site today and has registered for Food Safe Level 1 to update certificate.
Wiping cloths are being stored in a chlorine solution - good.
Scoops are to be sanitized every 4 hours. Change water every 30 minutes with fresh, cold water.
