Observation: Accumulation of food debris/dust observed from all shelves in utensil/plate storage room and shelves on the right side of prep table in kitchen.
Corrective Action(s): Ensure these areas are cleaned and sanitized. Do this on a more regular basis.

308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
Observation: 1) Mechanical dishwasher being repaired at the time of inspection. Staff had advised the dishwasher was working properly until last night when the water started to overflow. No event until weekend. Facility has enough clean utensils/tools to do minor processing. Dishwasher temperature log maintained.

2) linoleum stickers on storage shelves in front of the prep sink by the walk-in cooler require replacement.
Corrective Action(s): 1) Contact the health inspector once the dishwasher is repaired.

2) Replace stickers on shelves so that all surfaces are smooth, non-porous and easily cleanable.

Observation: Bleach spray bottle placed by the back prep sink requires a replacement.

Routine inspection conducted:

KITCHEN
-Handwash stations adequately supplied.
-Refrigeration temperatures satisfactory.
-Temperature monitoring system in place. Records kept up to date.
-General food storage practice very good.
-Ventilation canopy hood maintained. Next cleaning - Jan 2017.
-Utensils/equipment maintained in sanitary condition. Storage shelves require cleaning. Refer to above.
-Ice machine in sanitary condition. Scoop stored in proper manner.
->100ppm chlorine solution available in labelled spray bottles throughout.
-Washrooms satisfactory. No evidence of pest activity observed.

BARS
-Handwash stations adequately supplied.
-No foods stored at these areas.
NOTE: Ensure >100ppm chlorine solution is available for use when in use.

Facility rarely in operation during weekdays. Only minor pre-prep occurring.

Dishwasher repair work not complete by the end of the inspection. Follow-up inspection will be conducted tomorrow, December 15th, 2016. No major food prep nor dishwashing is to occur until then as agreed at this time.
