Corrective Action(s): - Place an empty tray on the top of the cart. It can protect the lower level food when the chilling process is ongoing.
- Prepare lids to cover the food from contamination.

Observation: - Flies observed in the hallway where the soiled uniform and aprons stocked in a wire rack. Flies enter in the storage area and the kitchen once the door is open.
Corrective Action(s): - Recommend to use a sealed container to store soiled aprons and uniforms.

Observation: - In the back storage area, food bebris observed on the round table. Staff did not clean and sanitize the table after packaging food.
- In the kitchen, grease/food debris built up on the shelving units, the cutting boards, the equipment like microwave and mixer bowl.
Corrective Action(s): - All the contact surfaces (food and non-food) needs a frequent cleaning and sanitation. Deep cleaning required minimum weekly.

Comments

Routine inspection conducted with the presence of the 2 owners.

- Hand sinks in the kitchen and washroom hand sinks were fully equipped with hand soap, paper towel and hot/cold running water.
- Bleach in spray bottle and bucket tested 100-200ppm. Advice given to the food operator when to use the bleach in the spray bottle.
- Dishwasher measured at 75.3C at the dish level by the end of the rinse cycle.
- Cold prep station measured -2.0~ 1.2. walk in cooler 3.7C. Chest freezers kept lower than -18.2C. No food stored in the room temperature. No hot holding and no chilling process observed.
- No mouse droppings observed in the facility. Back door and the door to the hall way were closed tight. Kwality pest control company did the pest services monthly.
