-Handwash sinks have liquid soap, paper towels, hot/cold running water
- All coolers at 4 deg C or less
- All freezers at -18 deg C or less
- Hot-holding units operating above 60'C --> as discussed, ensure to stir/move the chicken regularly so that the heat is evenly distributed
-QUATS sanitizer in spray bottle at 200 ppm
- Dry storage area good
- General sanitation satisfactory; no signs of pests at time of inspection
