- Operator subleases space/time at approved food premises (Creme de la Crumb) and operates only when Creme de la Crumb is not in operation (Sun to Sat after 6pm). Generally, 2 nights/week.
- Operator processing/packaging dry mixes (Honey carob energy bar mix, Cranberry energy bar mix, Rijsttafel curry meal mix). Mixes are shelf stable. No potentially hazardous foods in mixes.
- Products are sold at Farmers Markets and sold at retail.
- Food stored in a manner to prevent contamination - on shelving, in sealed packages or pest proof containers.
- Handsink in back preparation area supplied with hot and cold running water liquid soap and paper towel
- Dishwasher operational and capable of effectively sanitizing dishes. 100ppm chlorine detected in final rinse cycle.
- Quats sanitizer present in spray bottle. Concentration measured 200ppm
- No pest issues noted.
* Operator is planning to prepare dry soup mixes in the future. Soup mixes will follow same procedure as curry (assembling/packaging dry ingredients). Operator to supply list of products and copy of label for additional products prior to commencing production.
