Observation (CORRECTED DURING INSPECTION): Hot-holding unit was not turned on at time of inspection. Cooked chicken, vegetable stew were measured internally at approximately 40C. Food was cooked approximately 1 hour ago (snack bar serves hot food from 12:00-3:30).
Corrective Action(s): Items inside the hot-holding unit were reheated to 74C and hot-held at 60C. You must ensure that all potentially hazardous foods are hot-held at 60C or greater AT ALL TIMES.

Observation (CORRECTED DURING INSPECTION): Repeat issue. Ice machine is not maintained in good sanitary condition. Buildup of mildew-like substance was visible inside the ice machine.
Corrective Action(s): Drain the ice machine and thoroughly clean-in-place with sanitizer.

Observation: Food service worker does not currently have FoodSafe 1. She stated that she will be obtaining FoodSafe 1 certification next week.
Corrective Action(s): Obtain FoodSafe 1 - at least one worker at the snack bar MUST have FoodSafe 1 at all times.

Follow-up inspection conducted. The following was observed:
Hand wash station is adequately stocked with hot/cold running water, liquid soap, and single-use paper towels
Sandwich prep cooler at 2C. You may store potentially hazardous foods inside the cooler, but it must be strictly monitored to ensure that it maintains 4C or less at all times

A further follow-up may occur to ensure that proper hot-holding practices are followed.
