Observation (CORRECTED DURING INSPECTION):
Dishes coming out of the dishwasher were immediately dried using a towel. This towel was observed to be constantly re-used for drying the dishes.
Corrective Action(s):
Operator educated students that the dishes must be air dried. Ensure to follow the proper procedures for both manual and mechanical dishwashing. All dishes must be air dried after sanitation.

Observation:
1. Door seals for walk-in cooler and walk-in freezer observed to be unsanitary and have some mould growth.
2. Cleaning needed under some of the shelves in dry storage room.
Corrective Action(s):
1. Clean and sanitize door seals for walk-in cooler and walk-in freezer. Ensure door seals for all coolers and freezers are regularly inspected for maintenance and cleaning.
2. Clean under shelves of dry storage room.

Routine Inspection:
- All hand washing stations fully equipped with liquid soap, paper towels and hot/cold running water.
- All temperatures met health requirements:
Display coolers maintained at 4 degrees Celsius.
Walk-in cooler = 4 degrees Celsius.
Walk-in freezer temperature satisfactory.
Steam tables for hot holding maintained above 60 degrees Celsius.
- Prep sinks equipped with hot/cold running water.
- General food storage practices good:
Foods covered and protected from contamination.
Foods stored at least 15 cm (6 inches off the floor).
Dry storage organized.
No dented cans observed.
Bulk foods stored in pest proof containers.
- Concentration of QUATs sanitizer in all spray bottles = 200 ppm.
- High temperature dishwasher sanitizing with 71 degrees Celsius at dish level after the final rinse cycle.
- 3-compartment sink available for manual warewashing.
- Ice machine maintained in a sanitary condition. Ice scoop for ice machine stored in designated container.
- Premises well lit.
- Pest control in place.
- Permit to Operate posted.
