Observation (CORRECTED DURING INSPECTION): 1) Containers of foods in the display cooler noted at 5 - 6 deg. C. These foods were brought out about one hour ago.
2) The internal temperature of the milk in the prep cooler noted at 7 deg. C.
Corrective Action(s): 1) All potentially hazardous foods in the display cooler were relocated to the up-right one door cooler at 4 deg. C. To prevent microbial growth and toxin production, potentially hazardous foods such as meat products, cut vegetable and eggs must be stored at 4 deg. C or colder.
2) Milk discarded. Milk was in the temperature danger zone for more than 2 hours.

Observation (CORRECTED DURING INSPECTION): Some wiping cloths left on cooking line work surfaces with no sanitizer residual. Sanitizer solution was not available in the food handling area.
Corrective Action(s): Sanitizer solution must be available in the food handling area at all time. Store wiping cloths in the sanitizer solution when not in use to prevent microorganism growing.

304 - Premises not free of pests [s. 26(a)]
Observation: Found a dead mouse under the dry storage area. Found a live mouse in the dining area. Pest control serviced two days ago (Aug 1, 2018)
Corrective Action(s): Remove a dead mouse in a sanitary manner. Clean and sanitize the area affected by pest activity. Close the door in between the kitchen and the dining area. Increase the frequency of pest control services.

Observation: 1) Display cooler noted at 6.8 deg. C. A staff reported that they adjust the cooler when necessary. Adjusted the dial to the max setting. The temperature dropped to 2.5 deg. C.
2) Prep cooler air temperature noted at 2 deg. C - 7 deg. C. Internal temperature of the milk noted at 7 deg. C. Milk was in the cooler for few days.
Corrective Action(s): Both prep cooler and display cooler require a service. Temperature is not consistent. Maintain both coolers at or below 4 deg. C at all time.

-General sanitation is adequate
-High temperature dishwasher final rinse cycle: 75.8 deg. C
-Washroom facilities in a sanitary condition.
-Soft ice cream not in use. Kept in sanitary condition.
-Undercounter freezer: -18 deg. C
-Freezer in dry storage: -18 deg. C
-Sliding door drink cooler: 4 deg. C
-No droppings or damaged foods noted. (See infraction 304)
-Please forward a copy of pest control report to S26828@fraserhealth.ca for review.
-The premise will be closed today and re-open on September 4, 2018.
-A staff with Foodsafe Level 1 on site.
-Pregnancy and Alcohol Do Not Mix signs provided.
