Observation: Uncovered plastic container with a very dry/old rice with a dispense spoon on the top stored in the walk-in cooler.
Correction: Rice is discarded at the time of inspection. Ensure, that food is stored safely.

Equipment/utensils/food contact surfaces not maintained in sanitary condition [s. 17(1)]
Observation: Dirty slicer, mixer, & cutter (with old/dry food debris) on the prep. counter.
The owner claimed that it is on the counter for three days because a staff doesn't know how to dismantle the equipment.
Noted plates on storage shelves and knives in magnet and prep. counters covered in food debris.
Correction: Immediately. Properly clean and sanitize the kitchen aid equipment. Teach the staff how to use equipment.
Plates & knives must be washed and sanitized prior to being put away.

Observation: No surface sanitizer in the entire premise. Spray bottles labeled as Bleach sanitizer, however some different cleaning agent in it.

Correction: Immediately. Provide the surface sanitizer for the kitchen, service area, & bar.

Observation: The front service area - a rack with clean glasses stored on top of the hand washing station.
Correction: Immediately. Relocate the rack with clean glasses - the hand sink must be available all the time.

Employee does not wash hands properly or at adequate frequency [s. 21(3)]
Observation: No paper towel and liquid soap in the staff washroom, bar, service area.
Correction: Immediately. Supply by paper towel & liquid soap all hand washing station.

Deep cleaning has been done. General sanitation - good.
Food is stored safely at the time of inspection.
Note: Organized, covered, and off the floor.
All coolers temperature < 4.0 C;
Thermometers for cold units - available; as well as temperature log.
Freezers - satisfactory.
Surface sanitizer/Bleach - available and at 100 ppm (the bar, service, & kitchen areas).
Spray bottles - labeled.
Equipment & Utensils - clean (stored in sanitary manner at the time of inspection).
Walk-in freezer has been defrosted, cleaned, & organized.
Ice-maker - clean; a scoop is stored safely at the time of inspection.
The bar sink has been cleaned and repaired.


Friendly reminder:
1.Refinish the shelf above the 2-compartment sink (remain item).
2. Dishwasher must be checked regularly (ongoing).
3. Sealing around cold units doors must be cleaned regularly from food debris.
