Observation: Shared Dishwasher with The Buffet Restaurant is not working -as per operator the washer broke down this morning. Workers are carting dirty dishware to next door at Ebo Restaurant for washing in the meantime

Maintenance will be coming in later today to have the problem resolved
Corrective Action(s): Repair dishwasher immediately

If cleaning of dishware and utensils cannot be maintained then disposable dishware/utensils are availabe as a backup

Hot held foods must maintain foods at or above 60 deg C:
-broth 80 deg C

Chemical Controls:
QUAT-type sanitizer buckets must be maintained >200ppm as per test strips:
-checked and verified

Reused wiping towels for food contact surfaces maintained in sanitizer buckets when not actively used

Daily tracking sheets maintained for fridge(s), hot holder(s) and mechanical washer(s)

General Sanitation
-all goods maintained off the floor >15cm to facilitate cleaning and monitoring pests underneath
-no signs of pests

Professional pest control comes on a regular basis

Handsinks well stocked single service drying method, soap in a dispenser, hot/cold water and clear for access
