Front prep cooler at 3 to 4 degrees C (above) and 2 degrees C (below).
Back prep cooler at 1 degree C (above and below).
Beverage/snack cooler at 2 degrees C.
Small under counter cooler at 4 degrees C.
Smoothie/soft serve machine at 4 degrees C (internal product temperature).
Hot holding internal food temperatures at 60 degrees C or more.
Food is protected from potential contamination.
Hand sink is unobstructed and supplied with hot and cold running water, liquid hand soap, and single use paper towels.
Quaternary ammonium compounds (quats) sanitizer tested at 200 ppm quats (3-compartment sink dispenser, buckets with wiping cloths).
