Observation: Upright double door freezer is -7 degrees C.According to staff it has inconsistently been holding correct temperature.
Corrective Action(s): Ensure that all foods are being maintained at -18 degrees Celsius. Adjust, repair or replace as required. In meantime, remove meats and potentially hazardous products to another freezer.

Observation: Floors along walls under and behind equipment have a build up of debris. Office floor has a build up of debris as well.
Corrective Action(s): This has been noted on previous inspections. Please address and maintain these areas.

All fridges are maintaining foods at 4 degrees C or colder.
Single door freezers are -18 degrees C. or colder.
Dishwasher final rinse reached 73 degrees C. at the plate surface.
Liquid soap and paper towel at handsink.
Quat sanitizer at dispenser measured 200 PPM residual.
Bleach water bucket measured 200 PPM chlorine.
Temperature logs are being maintained.
Note: Freezers and fridges require reorganizing so that all raw meats are stored separate from ready to eat foods. Recommentd that different fridges and freezer being used for raw protein.
