301 - Equipment/utensils/food contact surfaces not maintained in sanitary condition [s. 17(1)]
Observation: Cutting boards, dishware, food containers etc. not washed and sanitized properly. Sanitizer not used to sanitize dishware in three -compartment sink. Operator utilizes the sanitizer compartment of the 3- comp sink to store dishware and other items. This is unsanitary.
Corrective Action(s): Remove all items from the sanitizing compartment of the three- compartment sink. Thoroughly wash and sanitize the sink. Make bleach solution 50-100 ppm in the sink compartment and sanitize all dishware after washing and rinsing.

401 - Adequate handwashing stations not available for employees [s. 21(4)]
Observation (CORRECTED DURING INSPECTION): 1- No liquid soap and paper towel available at hand washing stations at the time of inspection. Operator provided liquid soap and paper towels at each stations. Hand washing stations are to be supplied with liquid soap and paper towels at all times when kitchen is in operation.
2- A colander of cooked rice was stored in the H.W. sink. Operator removed the rice at the time of inspection. Hand washing sinks are to be used only for hand washing and not storing food. Hand washing sink must remain unobstructed.

402 - Employee does not wash hands properly or at adequate frequency [s. 21(3)]
Observation: It was observed that staff did not wash hands before preparing and cutting mushrooms and/or handling other food. Importance of hand washing were discussed.
Corrective Action(s): Staff and operator must wash hands frequently when handling food specially handling cooked food. Ensure staff have proper training about hand washing. Ensure all stations are available and easily accessible for hand washing.

Observation (CORRECTED DURING INSPECTION): Cooked rice observed to be stored in the hand washing sink. This might increase the risk of contamination to cooked rice. Operator removed the rice and stored in sanitary container.

306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation: 1- Excessive food debris and build-ups observed on back splashes, shelve and behind equipment.
2- Plastic covers observed on stainless steel splashes and counters. This create surfaces that are not easy to clean and maintain.
3- Grease build up observed at exhaust fan above the pizza oven. This is a fire hazard.
Corrective Action(s): 1- Thoroughly clean the floor, back splashes, equipment faces and fridge door handles. Clean back splash behind the oven. Remove protective plastic cover from stainless steel surfaces. Ensure to sanitize surfaces that clean dishware are stored.
2- Remove all plastic protective covers from all stainless steel surfaces so that it is easy to clean.
3- clean the grease from the fan hood above the pizza oven.

308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
Observation: It was observed that the mop sink was out of place and disconnected from sewer line. Mop sink observed to be used for storing pots and pans. This condition is unsanitary.
Corrective Action(s): Repair the drain line and connect to sewer line. Ensure there is no leak from the drain. Do not store dishware in the sink.

Observation (CORRECTED DURING INSPECTION): Sink and surface sanitizer observed to be stored in unlabeled spray bottles throughout the kitchen. Operator labeled the sprays properly at the time of inspections.

Routine inspection

Walk in cooler measured at 4C or colder. Food stored on shelve. Thermometer available.
Freezer measured at or below -18C.
Food stored on shelve and above the floor. Ensure recently open bag of flour off the floor.
Back door equipped with fly net. No obvious sign of pest activity observed at this date.
Cooling process of beef broth sauce discussed with the operator. Make smaller batches to cool down the sauce faster. cooling down process for cooked rice was discussed.

A follow-up inspection scheduled on AUG 25th
