Comments

Routine inspection conducted. Facility is well maintained, well-lit, and is in excellent sanitary condition. The following observations were made during the inspection:

1. Temperatures: All temperatures meet health requirements
- Undercounter cooler at 4C; undercounter freezer unit behind counter at-18C
- Hot-holding cabinet at approximately 70C. Foods stored inside varied in surface temperature from 65-70C
- Hot-holder for sausages at approximately 62C
- Crockpot(TM) holder for sauces at 70C
- Back storage area stand-up freezer at -15C
- Store walk-in cooler at 4C
- Store chest freezer at -15C
- Store front display cooler at approximately 3C (all shelves)
- Slushie machines both at 4C
- Store relish / condiment cooler at approximately 3C (top & bottom)
- Temperature logs are maintained and up-to-date

2. Hygiene and Sanitizing
- Hand wash station is adequately stocked with hot/cold running water, liquid soap, and single-use paper towels in front service area and in both restrooms
- Hard surface sanitizer spray bottle available at 200 ppm quaternary ammonium compound (quats)
- Sanitizer dispenser releases 200 ppm quats at 3-compartment sink
- Sanitizer logs are present and up-to-date
- Restroom area is hygienic and well-maintained
- Utensils and tongs are in sanitary condition. Tongs are swapped out periodically
- Slushie customer self-serve area is sanitary

3. Storage
- All food items are stored at least 6" off the floor
- Chemicals, including quats and cleaners, are stored separate from food preparation areas
- Store items are well organized, no expired goods (e.g. infant formula / meal supplements) observed at time of inspection
- All products are in original packaging or covered inside coolers - good

4. Pest Management
- Professional pest control company conducts routine checks. Last inspection conducted this month did not note any interior rodent activity
- EHO did not observe any recent visible signs of pest infestation at time of inspection
- NOTE: Mechanical trap underneath short ladder outside office is not armed with an adhesive - ensure that the pest control company corrects this the next time they arrive
