Follow up inspection:
-Thermometer was available inside the hot-holding case used to hot-hold BBQ duck and BBQ pork products.
-Hot-holding case was at or above 140 degrees F (60 degrees C).
-BBQ meat was at or above 60 degrees C internally. Meat was not being double stacked on the lower insert.
-Liquid soap dispenser in the third washroom was repaired.
-Person in charge stated that they are checking temperatures of hot-held food and the hot-holding case every 2 hours.
-Chopping block was in a clean condition.
-100 ppm chlorine sanitizer was available in a spray bottle below the chopping block.
