Sanitizer dispenser at 0ppm Quats at time of inspection. Operator was able to service unit at time of inspection. Dispenser tested at 200ppm Quats.
Ensure dishwasher, sanitizer dispenser and glasswasher logs are maintained routinely
Obtain Quats test strips to test sanitizer dispenser (minimum concentration: 200ppm)
Obtain a Max/Min thermometer to test dishwasher's rinse temperature - (minimum temperature 71C/160F)
Ensure all spray bottles are appropriately labelled with their contents.
Cleaning required at pop gun holders at bar

Discussed cooling procedures - ensure foods are cooled from 60C to 20C within 2 hours and then placed into a cooler to reach 4C within 4 hours. Be sure to use an ice bath to facilitate cooling.

Hand washing sinks equipped in kitchen, bar and employee bathrooms
All temperatures meet health requirements
Dishwasher tested at 71C/160F at plate's surface during rinse cycle
General cleanliness of facility is good
Food storage practices are generally good - items are mostly covered, organized and labelled.
Discussed in-use utensil policy - staff stated all tongs, spatulas, knives, etc are routinely refreshed throughout service
Ice machine maintained & ice scoop stored in a clean container
Glasswasher tested at 50ppm Cl
Temperature logs are maintained daily
