Observation (CORRECTED DURING INSPECTION): QUATs sanitizer in spray bottle measured at 100 ppm QUATs concentraion during inspection.
Corrective Action(s): Replace sanitizer in spray bottle with fresh QUATs solution measured at 200 ppm QUATs concentration to ensure food contact surfaces are being sanitized adequately.

Routine Inspection Conducted

Observations:
- Walk-in cooler (bread) at 2'C
- Walk-in freezer at -19'C
- Display cooler measured at or below -18'C
- Temperature logs are maintained
- All food observed stored covered and 6 inches off the floor
- General sanitation is satisfactory during inspection
- Hand washing stations are supplied with hot and cold running water, liquid soap and paper towel
- High-temperature dishwasher reached 71.4'C at plate surface (above minimum required final rinse temperature of 71'C)
- 3-compartment sink available with drain plugs
- QUATs sanitizer at 3-comp sink measured at 200 ppm QUATs concentration with test strip
- QUATs sanitizer strips are available on site
- No signs of pests during inspection. UV fly traps and rodent traps are available on site
- Pest control company visits every week
- All staff observed wearing clean uniforms and hairnets
