Comments

- General sanitation is satisfactory.
- Main handwashing station in the kitchen supplied with hot/cold running water, soap, and paper towels.
- Three compartment sink available for manual dishwashing. Drain plug available and sanitizer at 100ppm chlorine solution at min 45C.
- Dry storage area has adequate space and wire racks. All boxes and food items must be stored min 6inches (15cm) off the floor to facilitate cleaning.
- No signs of pest activity. A private pest control company inspects the kitchen monthly. Pest control reports show placing of baits.

Temperature Control:
- All coolers in the main kitchen (beverage, two prep coolers, walk in) at < or = 4C.
- All freezers in the main kitchen (chest) at < or = -18C.
