Observation (CORRECTED DURING INSPECTION): Meat sauce cooling in large container in walk-in cooler.
Corrective Action(s): Staff stated that it had been taken off hot-holding an hour ago. Staff split meat sauce into smaller containers to facilitate proper cooling.

Corrective Action(s): Staff had notified maintenance in September of the dishwasher not dispensing sanitizer. Dishwasher repaired at the time of inspection.
