General Comments:
Coolers were 4 degrees Celsius or less.
Freezers were -18 degrees Celsius or less.
Foods were hot-held above 60 degrees Celsius.
Temperature logs are being maintained.
Condiments were time stamped.
Hand sinks were fully equipped.
Discussed burger prep procedures. Temperature is checked for the first batch of burgers to ensure the inside reaches 165 degF.
Quats sanitizer in all the buckets were 200ppm. They're refreshed every 2 hours or more often as needed.
Dishwasher rinse temperature was 73 degC at plate level.
One of the employees on duty had FS level 1 equivalent certification.
Rentokil pest control is on a monthly contract. Last report reviewed. No concerns noted.
