Observation (CORRECTED DURING INSPECTION): Food ingredient liquid used for food prep was stored in a quat sanitizer bottle in the prep line. The bottle clearing states it is a Eco Labs quat sanitizer.
Corrective Action(s): Do not use chemical bottles to store food. Use dedicated food grade, labelled containers for food only. The bottle and food were discarded by operator.

302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation (CORRECTED DURING INSPECTION): Bar glass dish washer was determined to not sanitize glasses properly. Inadequate amount of sanitizer was determined using iodine chemical test strips (less than 12.5 ppm iodine).
Corrective Action(s): Ensure the glass dish washer is able to sanitize in the final step with at least 12.5 ppm iodine sanitizer at the plate. In the mean time, do not use bar washer and main kitchen dish washer is to be used for washing, rinising, and sanitizing glasses from the bar. Correction required immediately.

Observation (CORRECTED DURING INSPECTION): Food product was stored in a broken plastic container in the service line. Broken plastic was in the food.
Corrective Action(s): Ensure food containers are in good condition and food grade. Food and container discarded by operator.

Observation: Rodent droppings and old food debris was observed under shelving in the food preparation area.
Corrective Action(s): Clean, wash, and sanitize these areas. Contact pest control company to mitigate rodent activity. Correction required in 1 week.

Observation: Premise in general requires cleaning especially in hard to clean areas such as, but not limited to:
1. Under and behind shelving and cooking equipment.
2. In the walk in cooler walls, ceilings and fans. Dust build up was observed.
3. Spilled sugar was observed in the dining take out containers area.
Corrective Action(s): Clean these areas as needed. Correction required in 2 weeks.
