Observation (CORRECTED DURING INSPECTION): Dishwasher rinse temperature was only at 49.8 deg C at plate surface and thus not sanitizing the dishes properly.
Corrective Action(s): Service required for the dishwasher to fix problem. Wash gauge must indicate 60 deg C and rinse gauge must be at 82 deg C. Use manual ware washing (3 comp sink) until dishwasher has been repaired.

Comments

Hand wash station provided with liquid soap and paper towels.
Sanitizer (quats) measured 200 ppm (spray bottles and 3 comp sink).
Refrigeration unit was at or below 4 deg C.
New long deep freezer and smaller chest freezer installed in the dry storage area (temp. was at -15 to -18 deg C).
Fridge in the dry storage are was at 4 deg C.
Temperature log was available and up to date.
All food and food-related items were stored off the floor.
No signs of pests noted at time of visit. Pest control in place.
Note: Provided operator with Food Safe Reminder card.
Please attach new decal on the health permit.
