Observation (CORRECTED DURING INSPECTION): Mildew noted the water condensing tray of the ice machine. Discard the ice product have the unit properly washed and sanitized. To prevent contamination of ice products, ensure all components within the ice machine is frequently washed and sanitized.

Wiping rags were stored directly on cutting boards. To prevent growth of bacteria on wiping rags, ensure they are stored in a sanitizing solution when not in use.

Observation (CORRECTED DURING INSPECTION): No soap was available for the hand washing station located behind the deep frying station. All hand washing stations must be equipped with liquid soap and paper towels at all times.

Observation: Numerous broken tiles around the dishwasher area, which is allowing water to pond. Floor drain has been capped off. Replace broken tiles and have the floor drain repaired if there is a plumbing deficiency.

Observation: Hand delivered outstanding health permit fee letter. Ensure the outstanding amount is paid within 10 business days. Failure to comply may result in further enforcement actions.

Observation: Raw eggs used as batter for pork and chicken cutlet was stored at room temperature. Pooling of eggs for food products should not be practiced. Raw egg products are not to be stored at room temperature. Raw egg product was discarded.
Basket of bean sprouts was stored on the floor underneath the cooking units and a container of teriyaki sauce was stored directly on the floor underneath the food preparation table. Ensure food products are stored at least 6 inches off the ground and protected from contamination. Food products were relocated.

Routine inspection conducted and the following were noted:
Chlorine dishwasher achieved a final rinse concentration of 100ppm. Ensure chlorine test paper is available to monitor unit daily.
All cooler units less than or equal to 4C.
Chest freezer units at -18C.
Food items properly covered in cooler units.
Dating of sashimi products done in Korean.
