All coolers (large, display, milk) are at 4C or colder with the exception of the sandwich prep cooler which is being used to store small amounts of lower risk foods.
Produce is pre-washed or washed onsite.
Hot holding soups today are at 60C or hotter.
Operator advised they are reheated rapidly to 74C before hot holding.
Hand washing sink has liquid soap and paper towels.Wiping cloths are store in a 200 ppm chlorine sanitizing solution (spray bottle - use 1/2 tsp in 500 ml 2 water daily)
Dishwasher has a 160F hot water final rinse (180F + at gauge)
Counter by double sink has been replaced. Rough surfaces have been sealed. Good.
