Observation (CORRECTED DURING INSPECTION): Ice cream base (vanilla and green tea flavors) stored inside the ice cream machine chamber (2 chambers in 1 machine) probed at 7C. Staff is unsure how the temperature can be adjusted.
Corrective Action(s): Ensure the icecream base is maintained at 4C or below at all times. Adjust the temperature or repair the machine so it can store contents at 4C or below. The existing contents were discarded at the time of inspection. Do not prepare/serve ice cream until the machine is capable of storing ice cream base at 4C or below.

Observation (CORRECTED DURING INSPECTION): TonKotsu (Pork) broth on stove measured at 50C. The pot was not being heated at the time of inspection and staff stated each portion is poured into smaller pot and heated up before being served.
Corrective Action(s): Ensure to hot hold the broth to maintain its temperature at 60C or above at all times. The broth was heated up to bring the temperature up to 60C or above at the time of the inspection.

Observation (CORRECTED DURING INSPECTION): Ice scoopers stored with ice in the ice machine.
Corrective Action(s): Ensure to store ice scoopers outside of the ice machine, in a designated container to prevent contamination.

Observation: Dead mouse observed in tincat trap located in the dry storage room.

Comments

One kitchen is operated for facilities: Kokoro Tokyo Mazesoba and Tendon Kohaku.

- All handsinks are fully equipped with hot and cold running water, liquid soap in a dispenser and single use paper towels (in kitchen) or air dryers (in washrooms).
- All cooler units measured at 4C or below.
- All freezer units measured at -18C or below.
- Good storage practices observed throughout - containers are labelled and dated.
- All hot held food items at 60C or above - *note violation code 206 above - Tonkotsu broth should be hot held.
- Hot temperature dishwasher measured at 71C or above at plate level during the final rinsing cycle.
- Bleach sanitizer solution in spray bottles measured at 200ppm chlorine with test strips.
- Facility is managed by professional pest control company - *Ensure to provide the inspector with the most recent report.
- Ventilation hood in sanitary condition.
- Staff states janitor does cleaning in the night after closing.
- Staff holds valid Foodsafe Level 1 certificate.
- Staff observed actively checking vaccine passports and ID of all customers.

Note:
*Ensure to label all sanitizer bottles.
*Ensure to time track all tempura once it is deep fried in a batch. Ensure to discard any tempura that has been sitting in room temperature for more than 2 hours.

Follow up inspection will be conducted on March 25, 2022 to ensure all violations noted above are corrected and the proper practices are being maintained.
