Observation: Observed broken plastic containers storing food in the walk-in cooler. Broken containers are not acceptable: 1. Pieces of plastic may break into food and end up in a customer's dish 2. Cracks and crevices do not get cleaned and sanitized thoroughly and may become areas of pathogen survival and growth

Observation: Tile replaced in center strip of the kitchen cook line. The new tile produces a dip to the old tile below the cooking equipment. The dip may cause water to pool here and creates difficulty cleaning (as observed with large build-up underneath). All surfaces must be smooth, durable and easily cleanable.

All handsinks equipped with hot and cold running water, liquid soap and paper towel
Low-temperature dishwasher had 100 ppm chlorine sanitizer at the plate level upon final rinse cycle. Test strips on site
Quats sanitizer at 200 ppm. Used for in-use utensils. Solution changed every 2 hours. Test strips on site. Facility must check sanitizer concentration daily.
All coolers operating at </= 4C
All freezers operating at </= -18C
Hot-holding occurring at > 60C
Ice machine free of mould and rust. Scoop stored separately.
General sanitation (other than kitchen line) is adequate
No signs of pests observed. Pest control devices throughout.
