- Mouse presence improved. Discussed with operator. New Pest Control Technician/company doing good job of rodent control. Noticeable activity diminished since new year. Minimal signs of activity noted, but there are small volume of droppings noted in couple of areas, including back edge of walk-in cooler. Continue to control accessibility to food sources. General cleanliness is very good so that will help too. - Operator has system of preventing display food from getting to customer. sandwiches stored in cooler at front and quiche processed in back kitchen. Staff know routine. - stainless steel trim added in back kitchen. Looks good. Dishwasher at 71 C at plate. Cooling units good. Freezing below -18 C. Sanitizer sink and surface inspray bottles good - at manufacturers recommended levels. No issues noted.
