Observation: Ice machine appeared uncleaned inside and outside.
Corrective Action(s): Discard all ice. Clean and sanitize the surfaces inside and outside of ice machine following manufacturer's instructions.
Correction date: by end of day.

302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation (CORRECTED DURING INSPECTION): 1.Wiping cloths found in bucket at 50ppm chlorine solution. Solution appeared soiled. Staff discarded solution and remixed at 100ppm.
2. Low temperature dishwasher: No sanitizer detected at the dish plate (0ppm of bleach). 21C detected at the plate.Do not use dishwasher until repaired. At least 100ppm chlorine must be detected at the plate. In the interim, dishwas may be washed and rinsed in the dishwasher but must be soaked in sink of 100ppm chlorine solution for at least 2 minutes.
Corrective Action(s): 1. Corrected.
2. Repair the dishwasher to meet sanitizing requirement as stated above.
Correction date: immediately.

Observation (CORRECTED DURING INSPECTION): Employee was seen touching and pulling on pants' back pockets and then handling food in kitchen without washing hands. One hand had a glove on. Discussed with staff that gloves are not a substitute for hand washing. Staff washed hands when notified.

Observation: The following areas appeared uncleaned:
-Fume hood/exhaust canopy (all surfaces of)
-Wall under the fume hood.
-Shelf below the stove.
-Sides of pan frying unit
-Counters where pots and pans are stored.
-Meat grinder base
-Shelf where untensils, lids, empty bottles were stored
-Wall where knives were hung.
-Dry goods bins (lids and exterior surfaces)
-Shelf beside the dishwasher sink
-Bottom shelf at back (where onions were stored)
-Counters that wrap around the front area
-Shelves below the bar at the front where concentrated juice, cans were stored.
-Microwave (inside and outside)
-The door handles, doors surfaces and gaskets of all coolers and freezer units.
-Sugar/syrop dispenser
Corrective Action(s): Clean the areas noted above.

Hand washing sinks had hot and cold running water, liquid soap and paper towels in kitchen and bathrooms.

No evidence of pests noted at time of inspection. Pest control reported provided for Feb, Mar, and Apr.
