Observation (CORRECTED DURING INSPECTION): Several wet wiping towels were left on the counter. No sanitizer in the back kitchen at all; operator started making bleach sanitizer after EHO inquired about it but placed detergent in the solution as well.
Corrective Action(s): Directed operator to use bleach only when mixing sanitizer, never mix detergent with bleach. Operator remixed to 100ppm bleach sanitizer and placed wet wiping towels inside.
