Observation (CORRECTED DURING INSPECTION): Recently prepared skewered beef wrap internal food product temperature 12 degrees C in the under the preparation table cooler across from the walk in freezer. Ambient air temperature of cooler at 8-12 degrees C.
Corrective Action(s): Relocated items into the walk in cooler.

Observation:
- Ambient air temperature of under the preparation table cooler across from the walk in freezer at 8-12 degrees C.
- Ice machine door damaged and not in use. As a temporary measure a taped garbage bag being used as a cover. Note: garbage bag does not come into contact with ice. Scoops stored outside in a sanitary manner.
Corrective Action(s):
- Adjust under the preparation table cooler. Service if required. Ensure unit is capable of maintaining 4 degree C or less at all times. Correct immediately.
- Part required for the damaged ice machine door. Correct by December 31, 2017.

200ppm quats dispensed from chemical dispensing station. 200ppm quats available for use in spray bottles. Ensure all spray bottles are labeled identifying contents.
High temperature dishwasher registers 72 degrees C at the plate surface during the final rinse cycle.
