Equipment/utensils/food contact surfaces not maintained in sanitary condition [s. 17(1)]
Observation: General sanitation requires attention. Wooden cutting board is not in a condition that can be manitained in a sanitary manner.
Correction: 1. Ensure to clean and sanitize all food contact surfaces (counters, cutting boards) at least every 4 hours during operation.
2. Remove the wooden cutting board.
3. Remove all old and dirty equipment that cannot be properly washed.
Comments

Upon follow-up inspection, the following corrections were observed:
- Foods in hot holding units & under heat lamp all measured >60C
- Operator is using a probe thermometer to check internal temperatures of potentially hazardous foods
- No potentially hazardous foods are stored at room temperature
- Dirty cloths have been discarded
- 100ppm chlorine sanitizer available with clean cloths
- The wooden cutting board that had cracks on it was replaced with a new wooden cutting board
- General sanitation has improved greatly
- The raw wooden ice machine door has been replaced
- 2 main cooks will be taking FOODSAFE level 1 course within April & May
- The handsink in the main food preparation area is not obstructed for access
- Temperature log for refrigeration units has been put in place
