All hand wash stations fully equipped with soap, paper towel, hot and cold running water.
Operator to remind staff to keep paper towel on counter at the bar hand sink area and not store it in cabinet below hand sink.
Observed good hand washing practices at time of inspection.
All coolers 4⁰C or less (undercounter, inserts, upright sliding two door...etc)
Small container of bean sprouts on counter in ice water at 4C
Freezers less than -18C
Hot holding of rice and broths all higher than 60⁰C.
General sanitation satisfactory. No obvious sign of pest infestation noted at time of inspection. Back door to hall was closed at time of inspection.
Meat slicer appeared clean at time of inspection. Staff said meat slicer is cleaned and sanitized after each use and is used about twice a day.
Ice machine appeared clean with scoop for ice stored hanging on hook outside of the ice.
Chlorine sanitizer in container with cloths submerged and in spray bottle 100ppm.
High temperature dish washer achieved 71⁰C (with thermolabel).
All stored foods appeared protected (ie. stored off the ground, covered, lights in food prep areas had covers..etc)
