Observation: Many display/sliding glass door refrigerator door seals have accumulation of food debris, and undercounter cooler door handles were noted to be greasy.
Corrective Action(s): 1) Clean and sanitize insides and seals of all coolers at least once a week.
2) Clean and sanitize cooler door handles and all high-touch surfaces throughout each day.

Comments

- Hand sinks in grill department and in sandwich department were properly supplied with hot and cold running water, liquid soap, and paper towels.
- Quats sanitizer solution available at 200 ppm in spray bottles, in sanitizing pails, and at three-compartment sinks. Test strips available for use.
- High-temperature dishwasher (shared with the Sushi department) reached 75C at the dish surface during rinse cycle.
- All prep coolers and display coolers were maintaining temperatures of 4C or colder.
- Food storage practices satisfactory.
- Temperature records available for review and well-maintained.
- General sanitation satisfactory, aside from some cooler doors/seals (see violation code 306 above).
- Pest control in place, no signs of pest activity noted in this department at time of inspection.
