Observation (CORRECTED DURING INSPECTION): 1. Observed cooked potatoes sitting at room temperature in an insert- internal temperature at 18C.
2. Pico de gallo is placed in a plastic straining insert which sits in a metal insert at the top of the prep table - probed at 9C.
Corrective Action(s): 1. Potentially hazardous foods must be stored in a cooler at 4C or below OR in a hot holding unit at 60C or above. Staff discarded at time of inspection.
2. The use of two different inserts does not allow the cold air to penetrate to the food item. Ensure pico de gallo is strained in a CLOSED cooler at 4C and then placed into a metal insert when using at the top of the prep table. Corrected during inspection

Observation (CORRECTED DURING INSPECTION): 1. Observed several dishes stored at clean dish racks that were not properly washed
2. Sanitizer in buckets at the back were at 50ppm Quats. No sanitizer bar
Corrective Action(s): 1. Ensure there is a quality check of dishes prior to unloading from dishwasher racks. Manager removed any dishes requiring ar re-wash
2. Ensure sanitizer is at 200ppm Quats. Buckets refilled and Quats placed at bar

Observation (CORRECTED DURING INSPECTION): Observed frozen soup thawing under hot running water
Corrective Action(s): Frozen foods may be thawed under COLD running water or in a cooler at 4C. Manager changed water setting to cold.

Observation: Kitchen requires a very thorough cleaning from top to bottom
Corrective Action(s): Cleaning required at the following areas (but not limited to):
- All Coolers: thermometers, hinges, gaskets, handles, inside & outside
- Floors: All around equipment, underneath & behind.
- Bulk Bins: Ensure all bins are tightly sealed and appropriate scoops are in bins (scoops with handles)
- Dishwashing pit: clean whole area thoroughly
- Hand washing sink
- Walls, Counters, Storage areas, etc.
