Observation (CORRECTED DURING INSPECTION): The 3rd compartment sink had only water in it, without any sanitizer. Talk to staff about proper dishwashing procedures.
Corrective Action(s): After washing and rinsing dishes, soak them in a 200ppm (1oz bleach per gallon water) bleach solution for 2 minutes, then air dry.

Observation: Candies and licorice root by the cash register are stored in open mugs/containers.

Observation: The inside cover of one of the chest freezers in the back is falling apart. This was coded on the last inspection report as well.
Corrective Action(s): Seal the cover as discussed.

Comments

-All coolers are below 4 degC
-Freezers are below -18 degC
-No hotholding on-site
-Separate slicers used for meat and cheese. Slicers are sanitized every 2-4 hours.
-Hand sinks in the front are fully equipped
-200ppm bleach solution is available on-site.
-Temperature logs are being maintained
-Abell Pest control company is contracted out on a monthly basis. Service reports are on-site.
-The issue with the fryer on top of the single compartment sink was referred to the Fire dept. Unless instructed otherwise, you can keep things as they are. Do not turn off the tap at this sink as discussed.

NOTE: FOODSAFE CERTIFICATES ISSUED BEFORE 2013 EXPIRE ON JULY 29, 2018. GET STAFF RECERTIFIED AS REQUIRED.
