Observation (CORRECTED DURING INSPECTION): Back kitchen handsink - basin lined with papertowels.
Corrective Action(s): Staff removed all papertowels from sink basin.

Hand-washing stations are to kept fully accessible at all times to allow staff to conveniently and frequently wash their hands as needed.

Observation: Food inventory stored directly on the floor: in walk-in freezer and in walk-in cooler.
Take-out containers stored on the floor in dry storage area.
Cutting board stored on top of grease trap.
Corrective Action(s): Food items / food containers are to be stored off the floor. Foods should be placed on shelves that provide 6” clearance from the floor.
Relocate take-out containers and food equipment (cutting board) on to clean shelving.

Observation: Dust build-up on ceiling panels around ventilation duct, on adjacent wall panels and on wall mount wire shelving units.

Large amount of ice build-up in walk-in freezer.

Mouse droppings on floor at front entrance by folding security gate.
Corrective Action(s): All areas described are to be thoroughly cleaned to remove all build-up of debris from surfaces.

Areas affected by pest activity must be sanitized with dilute bleach solution (100 ppm chlorine 1 tsp bleach / 1 liter water) after cleaning.
