203 - Food not cooled in an acceptable manner [s. 12(a)]
Observation (CORRECTED DURING INSPECTION): Two containers of soup were placed in the cooler at 35C.
Corrective Action(s): Ensure hot potentially hazardous foods are cooled from 60C to 20C in 2 hours or less and from 20C to 4C in 4 hours or less to prevent potential growth of pathogens and/or the formation of toxins. Placing hot foods in the cooler may also result in the local temperature of the cooler to increase above 4C and potentially damage the cooler. Soup was placed in a sink of cold water at the time of inspection.

Observation (CORRECTED DURING INSPECTION): Mandolin slicers were found to have food debris on the blade.
Corrective Action(s): Ensure slicer is properly disassembled for cleaning and sanitizing after each use to prevent potential cross contamination. Slicer was disassembled and washed and sanitized at the time of inspection.

Observation (CORRECTED DURING INSPECTION): Kitchen handwash station basin was blocked with a large metal bowl.
Corrective Action(s): Ensure handwash station is easily accessible to facilitate proper handwashing. Bowl was moved at the time of inspection.

Observation: Rodent was found on a sticky trap at the front cash register area.
Corrective Action(s): Ensure facility is maintained in a condition free of pests. Operator has sealed potential entry points and has a screen door for the back door. Continue to monitor for pest activity and contact pest control services as needed.

Observation: Chlorine sanitizer pail was unlabelled.
Corrective Action(s): Ensure all chemicals are properly labelled to prevent accidental mixing and/or misuse of chemicals. Ensure containers are relabelled as needed.

-Kitchen prep coolers were both at 4C (top and bottom).
-Service area prep cooler was at 4C (top and bottom).
-Single door upright cooler by the prep coolers was at 4C.
-Single door prep cooler in the kitchen was at 4C (do not block the fan at the top to allow for proper air circulation).
-Double door upright cooler was at 4C.
-Cold soup was less than 0C.
-Kitchen chest freezers were at -8C and -15C.
-Kitchen upright freezer was at -18C.
-Hot holding of rice, soondae, and soup were greater than 60C.
-Chemical dishwasher had a final rinse of 50ppm chlorine on the dish surface during the final rinse (minimum of 50ppm required for sanitizing).
-Bleach sanitizer spray bottle tested at 200ppm.
-Foods stored off the ground and protected from potential contamination.
-Washroom clean and sanitary. Handwash station supplied with liquid hand soap and single use paper towels.
-FOODSAFE Level 1 valid until June 25, 2024.
