Continue to work on maintaining a high level of sanitation regularly. -Operator has purchased 2 ice wands that are large enough to accomodate 20 L buckets. **Purchase 2 additional ice wands so that they are readily available for cooling pho broth** -Cooling practices reviewed with operator and cook. -Proper use of ice wands reviewed with operator and cook. -Ensure that ice wands are properly washed and sanitized before each use.
