Observation (CORRECTED DURING INSPECTION): Ice scoop noted stored in the ice maker bin. This may introduce contamination to ice. Operator stored ice scoop in a clean container out of ice bin. Please ensure this issue addressed and discuss the practice with staff.

Observation: Number of Fruit flies noted in kitchen. Noted that blue light fly control device is not working.

Observation: Build-up and grease observed specially under equipment, on back splashes and on walls in the kitchen and in janitorial area behind Walk-in freezer.
Many items not needed for operation stored under S.S counters, some paint pales and tools noted at the janitorial area.
Corrective Action(s): Remove unneeded items and free up space under counters and under equipment. Remove paints and tools from the janitorial area.

- Food cooling procedure discussed. Ice wand to be used to cool down soups faster.

General sanitation discussed.

- Dish washer registered at or above 71C.
- Mop sink available and maintained.
- Sanitizer in spray bottles used for customer tables and general area.
