Hot and cold running water available at all sinks
All coolers at 4 C or lower; all freezers at -18 C or lower; all hot holding units at 60 C or above
Noted once cooked wedges are left at room temperature for maximum 2 hours. On order, they are fried once more for 45 seconds. After 2 hours, each batch is discarded. Timer present and beeps every 2 hours to notify operators
QUAT sanitizer on site and in use at 200 ppm
Three compartment sink used for manual dishwashing.
Observed raw chicken being thawed under cold running water.Ensure to NOT have chicken under cold running water for too long as the temperature is not less than 4 C.
No sign of pests noted at the time of inspection
