Observation (CORRECTED DURING INSPECTION): Bleach available on site but no sanitizer was made up at time of inspection. This issue was noted on the previous inspection report.
Corrective Action(s): Ensure 100ppm chlorine sanitizer solution is made at the start of each day before food preparation.

209 - Food not protected from contamination [s. 12(a)]
Observation: A) Noted the following foods on the ground in the back hall at time of inspection: Open container of tomato sauce and open container of soaking peeled carrots and potatoes (all 5C at time of inspection).
B) Trays of raw meat were stored on the ground in the walk in cooler.
C) Lights above the dishwasher did not have covers or sleeves. This was noted on the previous inspection report.
Corrective Action(s): A) Do not store foods in the back hall. Perishable foods such as tomato sauce should be kept in the cooler unit.
B) Keep all stored foods covered and stored off the ground.
C) Obtain/install covers/sleeves for lights above dishwasher.

Observation: Noted door to back hallways open. This issue was noted on the previous report.
Corrective Action(s): Keep door to the kitchen closed to prevent the entry of pests or obtain/install a screen door.

Observation: Noted the hall beside the microwave was dented and worn away.
Corrective Action(s): Repair wall and resurfaces so that it is smooth, durable and washable.

Comments

All hand wash stations fully equipped with soap, paper towel, hot and cold running water.
All coolers 4⁰C or less (prep cooler unit, upright cooler, walk in cooler unit, undercounter cooler units at bar...etc)
Freezers (chest freezers x2, upright one door freezer unit...etc) less than -18C
No hot holding units available at time of inspection. All foods were being cooked to order or kept hot on the stove for immediate service.
Colour coded cutting boards on site for prevent cross contamination during food preparation.
Operator confirmed he still purchases pregrated cheese. Remove cheese grated from premises if not used for operation.
General sanitation satisfactory. No obvious sign of pest infestation noted at time of inspection.
Meat slicer in use at time of inspection. Ensure meat slicer is taken apart and thoroughly cleaned and sanitized after each use.
Ice machine appeared clean with scoop for ice stored outside of the ice in a separate container.
Low temperature dish washer had 50ppm chlorine. Test strips available to check.
Fetal alcohol signage provided. Please post one in each public washroom.
