Comments

- Hand sink is equipped with hot & cold running water, liquid soap and paper towels
- High temp dishwasher achieved >71C at plate's surface
- Temperatures of refrigeration units, except for the cooler where milk and cream are stored, meet regulatory requirements (<4C for coolers, <-18C for freezers)
- The upright cooler where milk and cream are stored measured 7-8C. Monitor the temperature and adjust/repair as needed.
- Consistent temperature log is in place
- Foods on hot holding units (gravy, soup) measured >60C
- Foods are stored in a manner that prevents cross-contamination from raw meats
- Pest control in place; no signs of pest activity noted at the time of inspection

ATTENTION:
- QUAT measured at 400ppm. Ensure that QUAT sanitizer is maintained at 200ppm to prevent chemical contamination of foods.
- Light fixtures require covers throughout the facility and inadequate lighting noted in the back area. The general manger called for repair during inspection.
