Observation (CORRECTED DURING INSPECTION): Prep cooler (closest to the walk-in cooler) foods were probed at 7C.
Corrective Action(s): Cold potentially hazardous foods must be stored at 4C or less at all times to prevent the growth of pathogens and or the formation of toxins. Items were relocated at a cooler at 4C at the time of inspection.

Observation: 1) Prep cooler (closest to walk-in cooler) was at 7C.
2) Door seals for the 2 prep coolers and the glass door into the walk-in cooler are in need or replacement.
3) Wall/floor moulding needs to be repaired.
Corrective Action(s): 1) Service or adjust cooler and ensure it can maintain 4C or less at all times.
Correction date: July 17, 2017
2) Replace door seals to prevent the loss of cold refrigeration air and to prevent food debris from accumulating inside the door seals.

3) Wall/floor mould which is falling off needs to be repaired.

Comments

-Walk-in cooler was at 2C.
-Walk-in freezer was at -18C
-Prep cooler (closest to dishwasher) was at 2C.
-Upright freezer was at -21C.
-Hot items properly heated on the flat top grill prior to hot holding.
-Chicken wings and roast probed at less than 4C in the walk-in cooler.
-Chemical dishwasher had a final rinse of 50ppm chlorine sanitizer on the dish surface (minimum 50ppm required for proper sanitizing).
-Bar glasswasher had a final rinse of 12.5ppm iodine (minimum 12.5ppm required for proper sanitizing).
-Handwash stations (kitchen and bar) easily accessible and supplied with hot and cold running water, liquid hand soap, and single use paper towels.
-Quats spray bottles properly labelled and tested at 200ppm. Sanitizer dispenser tested at 200ppm.
-Deli slicer properly disassembled for cleaning and sanitizing.
-Ice machine was found to be clean and well maintained.
-General food storage practices satisfactory at the time of inspection. Foods stored off the floor, covered, and stored in food grade materials. A few scoops were found stored inside food containers - ensure scoops are stored in a sanitary manner.
-General sanitation satisfactory at the time of inspection. Some areas under the cook line require more attention.
-No signs of pests noted at the time of inspection.
-Staff washroom clean and sanitary.
